Pineapple Casserole

1 (20 oz) can of pineapple chunks in JUICE (not in heavy syrup)

3 Tablespoons flour

1/2 cup sugar

3 tablespoons of pineapple juice

1 cup grated cheddar cheese

1/2 cup butter

1 cup Ritz cracker crumbs

Preheat oven to 350 . Drain Pineapple, saving 3 tablespoons of juice.
Combine sugar and flour, stir in juice, add cheese and pineapple chunks. Mix well. Spoon into a buttered 1 1/2 quart casserole.
Melt butter and mix well with cracker crumbs. Sprinkle the butter crumbs mixture over the pineapple.
Bake uncovered for 20 to 30 minutes or until crumbs are lightly brown.

It is easy to double or triple this recipe .

Laurie this definitely could be used as dessert but we usually serve it as a side dish with ham or turkey.

thanks lynn1... it sounds very easy and I want to try it. Delee's is very similar. It reminds me of serving cranberry sauce with turkey... this goes more with the ham.

my wv is ingesim.. indegestion??? Hope not! LOL

After I went to bed I was thinking of this and thought it might be a side dish with ham. We often serve pineapple with it so that makes sense. Sounds yummy!

Any dish that has pineapple, sugar, butter and cheese is sure to be good! LOL
This is always a crowd pleaser.

I have been baking and making candy all day and I am wiped out!
My hubby is going to take me to the buffet at the casino tonight for supper. Yummy! All I can eat including seafood and I don't have to cook it or clean up afterwards!
